(Disclaimer: If you can foot the bill on organic ingredients, that's the best route to go for your health. For chicken, all natural pasture-fed is next to organic. That's what I buy at Earthfare since it is soo close to organic and doesn't have any anti-biotics or animal parts being fed to the chickens.)
Coconut Milk Soup
(I know, I know...it sounds less than desirable, but trust me, it's sooooo good!)
1 1/2 quarts homemade fish or chicken stock (or just use a healthy brand of stock)
1 1/2 cups coconut milk and cream (it's canned)
1 lb of chicken or fish, cut into small cubes
3 jalapeno chilies, diced OR 1/2 tsp. cayenne pepper, dried
1 Tbsp. grated fresh ginger
2 Tbsp. fish sauce (optional)
2-4 Tbsp. lime juice
Chopped cilantro for garnish
Simmer all ingredients until meat is cooked through. Garnish with cilantro. Serves 6-8
(So, any good eater knows that this won't serve 6-8 people, but rather four. And if you have a hungry hubby who gets seconds, I'd say three adult/1 child serving.)
Footnote: To those of you who are local, I bought a block of fresh ginger, so I'd be happy to lend you a tablespoon.

Mmmm... that sounds Yum-mee! It's a Thai recipe, huh? It sounds like the soup I like to get at my favorite Thai restaurant here. Mmmmmm.....
Oh I LOVE this soup too! When we were in Thailand, it was a staple and I had so much fun getting to eat it all the time. Back at the house, it's definitely not one of Josh's favs :).
