"Messies," you ask? Not muffins? Since Laney calls them messies, and since it's so incredibly melt-my-heart cute, we call them messies too. There's a story to back this up. One day, she made mention that she wanted a muffin that was sitting on the counter. I told her we needed to get a plate, because they were messy. And well...it stuck. I was correcting her at first using the word "muffies" but that just took all the cuteness out of it. I caved and gave in to "messies." I'll be fine if she calls them messies forever.

I want to share this most amazing recipe with you. Mmm! I'll share the basic muffin recipe with you first and then what you'll need to add to make the banana-nut messies.

*Basic Muffin Recipe
2 1/4 cups freshly milled flour (hard red) or (use all-purpose flour from the store)
1 tsp salt
1 tsp soda
1 tsp baking powder
1 cup buttermilk
1 egg
1/2 cup oil (I use coconut oil, since it's so good for you)
1/2 cup honey (I use pure maple syrup since we have it in bulk)

*Banana-Nut Messies: Add to above recipe
2-3 mashed bananas (i like using ripe ones)
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
1/2 cup walnuts (i put mine in my food processor and chop them ultra-fine so Laney can't taste them-- you could also use 1/4 cup whole millet instead)
Measure dry ingredients into mixing bowl. Add liquids and mix just until well blended. Drop by spoonfuls into greased 12 cup muffin or 24 cup mini muffin pan.

*Basic Recipe: Bake at 400 degrees for 15 minutes
*Banana-Nute Recipe: Bake at 400 degrees for 20 minutes
Smooth some butter over it while warm. You can't eat just one. Your house smells amazing too while baking.

Yay Amanda! You will LOOOOVE them. I could NOT stop eating them today hot out of the oven. I'd leave them in the muffin pan for a few minutes and then put them on a cooling rack. They will be really moist due to the bananas you have in there. Let me know what you think! I haven't made them with honey yet, but I do know that the pure maple syrup is DIVINE in the messies.
Oh my word!!!! Those Banana muffins are AMAZING!!!! I can't believe they don't have any sugar in them besides the honey and bananas!! I was just telling Bret yesterday that I really wanted to use up those bananas....I've already eaten three muffins (ok...so technically I've had two but I'm headed for another right now :)

We make the exact same recipe all the time (except I use honey and olive oil). We love them! But, I've never thought of grinding up the nuts really fine...I usually just make half with nuts and half without. But, your way is much easier. You look amazing in the previous pics Hollie!
