Green Eggs and Ham

Do YOU like green eggs and ham?



Tonight I scrambled up some eggs and put in some pureed spinach into the whipped egg. We didn't have ham though. As much as I like ham, we're trying to not eat it so much, since it's just not good for our bodies. I LOVE ham though. If you want to add some nutrition to your meal, I would encourage you to add pureed foods into the recipe. You, your spouse and your kids will never know(unless of course your eggs are green. Kids love it though!!) But I will say that I could hardly even taste the spinach. What a great way to boost our health with this super green veggie!! I will put pureed brussell sprouts in Laney's yogurt, along with flax seed oil, wheat germ and some blueberries/raspberries and she never knows. She gobbles up every last spoonful, and of course I'm happy to see it all go.


I know it looks not so appealing, but trust me, you can't even taste it, and that's without bread and cheese.



Hugh has been trying to clean out our garage, since it was been our dumping ground for who knows how long. We purged the house of things we weren't using and it all went to the garge to be dealt with later. Once he sorted things out into bins, I went through them to see what we wanted to salvage. Here we are snuggling in the cold weather!! I had to strap Laney to me with the Ergo since I had to go through the boxes.




Laney and I took a break and played in the backyard some. It was sooo cold!!!










We went over to some friends house (Caleb and Kimberly) for some dinner. It was such a treat to go out at night!!! We brought the pack'n play and bathed Laney over there. She slept until midnight until we woke her up to go home. We had a great time!

Nothing like an XBOX 360 steering wheel to entertain Laney while we are dressing her after her bath. Thanks Caleb!

I'll try the green eggs, but you can keep the ham! ;) I'm so excited about my new Deceptively Delicious book, and can't wait to try some recipes.

I LOVE the snuggling-in-the-garage picture. It was SUPER cold here last week - in the 20's! But now it's 70 degrees again! Can you believe that?

Is that a special little towel Laney has on after her bath? Or is it just a hand-towel she has wrapped around her in the picture?

That's just a hand towel, but it wouldn't be hard to put elastic in it along with some velcro to close it, so she could have her own little cover-up for BIG GIRLS! :)

Yeah, it's warm here too. I LOVE it, although I shouldn't since it IS January and we should be wearing hats and scarves. But I'll take a few warm days so I can take Laney out to play in the sun!! Miss you!

Hollie - you ought to try frozen peas some time. Laney's just the right age to eat them and then LOVE playing with them before eating them. It's great for their teething times too.

laney's hair has gotten so long. I love it!

What wheat germ & flax-seed oil do you use do you use? We haven't tried those yet. Wouldn't you know Landen likes his plain flavored yogurt. SOUR! Thankfully, we hide things in pancakes, pasta sauce, and he loves to "dip" his apples, etc. into purees. Apples & lentils anyone? -Courtney

I use the refrigerated organic flaxseed oil and a bag of wheat germ that I keep refrigerated to keep my grains fresh. I don't have the brand name of it on hand, but I can get it to you. I'm about to incorporate cod liver oil very soon, if I can get ahold of the good stuff.

Sorry, but that green goop on Laney's tray is about the foulest thing I've seen since I cleaned out Scarlett's last diaper :)
